Like I mentioned on twitter and Instagram, I prepared Okra soup last night. This is a Nigerian delicacy in which okra is thickened into soup. This is one of my favorite soup to make and eat.
Here are pictures and my recipe…
Ingredients:
- Okra
- Palm Oil
- Choice of meat — I used goat meat
- Onions
- Crayfish
- Habanero Peppers
- Spinach
- Salt to taste
- Seasoning: Knorr cube
Chopped Okra

Chopped Spinach
Glance of some of the items that I used including “ground hot pepper”, salt and knorr cube seasoning. On the top left is the blended crayfish and habanero peppers.
Cooking process
- Cut the okras into tiny pieces
- Chop the onions
- Cut the spinach into tiny pieces. If you are using frozen spinach, defrost and cut it into tiny pieces
- Blend the habanero pepper and crayfish
- Cook the goat meat until it is well done. Add the blended habanero peppers and crayfish and boil for an additional 20mins
- In a separate pot, pour the red palm oil and let it heat up. Add the diced onions and okra and fry until the “draw effect” of the okra kicks in. This process will last less than 5 minutes.
- Add the chopped spinach and stir well before adding the cooked meat and broth.
- Cover the pot and let it simmer for 10-15minutes and it is ready to serve.
**Updates: To cook the goat meat, just add water, pepper and salt for taste. You can always add more water until you feel the meat is tender or well done.

Totally a different way of preparing okra soup I must say. Im Yoruba and I've seen my grandmom prepare it with bitterleaves and not spinach. But it's worth trying out . . .without the palm oil though.
I thought I was the only one who loves okra and actually ate it with no gripes! I love this, it looks pretty healthy too!

@ Gabrielle: Cooking the goat meat is pretty simple. You just add water, salt and pepper for taste. You can continue to add water until it is tender and well done. Sometimes, it takes awhile to cook. For the pounded yam, you buy the "pounded yam" flour from an International store or African store. Start with boiling 1-2 cups of water depending on the quatity that you want to make. When the water is boiled, lower the heat and slowly add the powdered "pounded yam" while you stir it. Continue that process until it is thick and blends completely. Hope that helps. @Anonymous: Hi Maisy: The crayfish is for spice/favor. It is blended and add to give it a taste. I believe Crawfish is the same at crawfish. You can use it, but blended crawfish.I have never tried the soup without it because it gives the soup its favor.
